Ingredients
for 1 serving
½ cup rice
2 cups water
1 tablespoon soy sauce
1 teaspoon sesame oil
½ cup frozen vegetable
2 eggs
salt, to taste
scallion, chopped, to serve
Preparation
1 In a bowl, combine the rice, water, sesame oil, and soy sauce.
2 Stir, then microwave, covered, for approximately 6-8 minutes until the rice is
fully cooked.
3 Mix the frozen vegetables into the rice.
4 In a microwaveable mug, beat the eggs.
5 Microwave the eggs and the rice again for approximately 1-2 minutes, until the
eggs are fully cooked.
6 Break up the egg into small bits, then mix it in with the rice.
7 Top with scallions, and serve.
8 Enjoy!

GIL: +Vereen John if you have never used sesame oil before in your cooking, you are in for a treat. It adds a distinct flavor and aroma to your food with just a small amount. You could use olive or any other oil but sesame oil makes a big difference that you will like. ( I would also add a dash of garlic and ginger to this )
